Grilled Zucchini Roll-Ups Skewers

Ingredients

  • 2 zucchinis
  • 100 g of thinly sliced raw ham
  • 100 g of spreadable cheese (such as Philadelphia)
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Skewers for grilling

Preparation

  1. Wash the zucchinis and slice them lengthwise into thin strips using a mandoline or a sharp knife.
  2. Heat a grill or non-stick pan and grill the zucchini slices on both sides until they are soft and have the typical grill marks.
  3. Once cooled, spread a generous amount of spreadable cheese on each slice of zucchini.
  4. Place a slice of raw ham on one end of each zucchini slice, then roll up the slices starting from the ham side to form the roll-ups.
  5. Skewer the roll-ups, alternating them on the skewers, and make sure the raw ham is well secured.
  6. Before serving, you can brush each skewer with a little oil and add a pinch of salt and pepper.

You can quickly pass the skewers over a hot grill or griddle for a more appealing effect and to make the ham crispy. Alternatively, they can be served as they are for a fresher and lighter result.
