Gratin Gnocchi Skewers

Ingredients

  • 500 g of potato gnocchi
  • 200 g of smoked scamorza cheese (or another easily melting cheese of your choice)
  • 100 g of cubed bacon
  • 30 g of butter
  • Salt
  • Pepper
  • A few sage leaves
  • Extra virgin olive oil
  • Wooden or metal skewers

Preparation

  1. Pre-heat the oven to 200 °C on grill mode or get the barbecue ready if you prefer grilling outdoors.
  2. If using wooden skewers, soak them in water for about 30 minutes before using them to prevent burning during cooking.
  3. Boil a pot of water, add salt, and cook the gnocchi. Drain them as soon as they float to the surface, immediately cooling in cold water to stop the cooking process.
  4. In the meantime, cut the scamorza cheese into cubes similar in size to the gnocchi.
  5. In a pan, sauté the bacon cubes until they become crispy, then set them aside.
  6. Assemble the skewers by alternating gnocchi, scamorza cubes, and crispy bacon. You can also place a sage leaf between the ingredients for an additional flavor.
  7. Arrange the skewers on a baking tray lined with parchment paper, lightly drizzle with extra virgin olive oil, and distribute a few flakes of butter over each skewer.
  8. Place the skewers under the grill for about 5-10 minutes, or until the cheese begins to melt and brown.
  9. Once ready, remove the skewers from the oven and serve immediately.

Italian Variations: Try serving the skewers with a sauce of fresh tomato or a Genovese pesto to add an Italian touch to the dish. Moreover, you can include some cubes of grilled eggplant or zucchini to incorporate a vegetable element.
