Simple Jam Muffins
17/11/2023Jam muffins are a simple and sweet delight, perfect for breakfast or a snack. Here I propose a basic recipe that you can enrich with your favorite jam.
Ingredients
- 250 g of all-purpose flour
- 150 g of sugar
- 100 ml of milk
- 2 eggs
- 80 g of melted butter
- 1 packet of baking powder
- 1 pinch of salt
- Jam to taste (about 200 g)
- Powdered sugar (optional, for decoration)
Preparation
- Preheat the oven to 180 °C and prepare a muffin tin by lining the individual compartments with paper liners.
- In a bowl, mix the flour with the baking powder and a pinch of salt.
- In another bowl, beat the eggs with the sugar until you obtain a light and fluffy mixture.
- Add the melted butter to the egg and sugar mixture and mix well.
- Little by little, incorporate the sifted flour alternating with the milk, continuing to mix to avoid lumps.
- Fill the muffin cups 2/3 full with the batter.
- Add a teaspoon of jam to the center of each muffin, without pressing too hard. The jam, during baking, tends to sink slightly, creating a surprise heart.
- Bake the muffins for about 20 minutes or until they turn golden and a skewer inserted into the center comes out clean.
- Remove the muffins from the oven and let them cool on a wire rack.
- If you wish, before serving, you can dust your muffins with powdered sugar.
