Sicilian-style Swordfish

Sicilian-style swordfish is a tasty and flavorful dish that pairs the strong taste of the swordfish with the freshness of citrus fruits and the Mediterranean flavor of capers and olives. Here’s the recipe:

Ingredients

  • 4 slices of swordfish (about 200 g each)
  • 2 tablespoons of pitted black olives
  • 1 tablespoon of salted capers
  • 1 clove of garlic
  • Parsley to taste
  • Juice of 1 orange
  • Juice of 1 lemon
  • 2 ripe tomatoes
  • Salt and pepper to taste
  • Extra virgin olive oil to taste

Preparation

  1. Start by rinsing the capers under running water to remove excess salt. Cut the black olives into rounds and set aside.
  2. Wash the tomatoes, remove the skin and seeds, and cut them into small cubes.
  3. Take a large pan and heat a drizzle of extra virgin olive oil. Add the garlic and, once golden, remove it and place the swordfish slices in the pan.
  4. Cook the swordfish for about 3-4 minutes per side. Season with salt and pepper to taste.
  5. Remove the swordfish from the pan and keep it warm.
  6. In the same pan, add the tomato cubes, capers, and olives. Let them flavor for a few minutes.
  7. Add the orange and lemon juice and let the sauce reduce slightly.
  8. Arrange the swordfish slices on the plates and drizzle with the citrus, capers, and olives sauce. Garnish with chopped fresh parsley.

Curiosity

Sicilian-style swordfish is inspired by the typical flavors of the island, and often can be enriched with ingredients such as pine nuts or raisins, to create a much-appreciated sweet and savory contrast in Sicilian cuisine. Moreover, to add an extra touch of flavor and color, sometimes slices of orange and lemon are also added during the cooking process.
