Sicilian-style calamari

Ingredients
- 500 g of cleaned calamari
- 1 clove of garlic
- 200 g of peeled tomatoes
- 50 ml of white wine
- 2 tablespoons of extra virgin olive oil
- Fresh parsley to taste
- Salt to taste
- Pepper to taste
- Dried oregano to taste
- Juice of half a lemon (optional)
Preparation
- Begin by slicing the calamari into rings or if you prefer, they can be left whole.
- Heat the oil in a large pan and sauté the garlic until golden. Then, remove it from the pan.
- Add the calamari to the pan and sauté over high heat for one minute, to seal them and keep them tender.
- Deglaze the calamari with white wine and allow the alcohol to evaporate for a couple of minutes.
- Add the crushed peeled tomatoes with a fork, salt, pepper, and oregano. Mix well.
- Lower the flame and cook for about 20-25 minutes or until the sauce thickens and the calamari are tender.
- At the end of cooking, add the chopped parsley and if you want a hint of acidity, a drizzle of lemon juice.
- Mix well and serve hot.
Tip: This dish pairs beautifully with a good cold Sicilian white wine, like a Grillo or an Etna Bianco, which contrasts with the marine notes and tomato.
