Sicilian-style calamari

  • 200 g of peeled tomatoes
  • 50 ml of white wine

Preparation

  1. Begin by slicing the calamari into rings or if you prefer, they can be left whole.

  3. Add the calamari to the pan and sauté over high heat for one minute, to seal them and keep them tender.
  4. Deglaze the calamari with white wine and allow the alcohol to evaporate for a couple of minutes.
  5. Add the crushed peeled tomatoes with a fork, salt, pepper, and oregano. Mix well.
  6. Lower the flame and cook for about 20-25 minutes or until the sauce thickens and the calamari are tender.
  7. At the end of cooking, add the chopped parsley and if you want a hint of acidity, a drizzle of lemon juice.
  8. Mix well and serve hot.
