Sicilian Seabream Sandwich

The Sicilian seabream sandwich is a creative interpretation that combines the delicate flavor of the fish with typical ingredients of Sicilian cuisine. Here’s how to prepare this delight:

Ingredients

  • 2 fresh seabream fillets
  • 4 slices of homemade bread
  • 1 clove of garlic
  • A few fresh basil leaves
  • 2 ripe but firm tomatoes
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Dried oregano
  • Pitted black olives (Sicilian type if possible)
  • Salt-cured capers
  • Lemon juice

Preparation

  1. Begin by cleaning the seabream fillets, removing any bones, and marinating them briefly with lemon juice, oil, salt, and pepper.
  2. While the fish is marinating, slice the tomatoes. If they are too juicy, you can remove the seeds to prevent the bread from becoming too soggy.
  3. Heat a drizzle of oil in a pan and add the unpeeled (i.e., with skin on) crushed garlic clove. Let it flavor the oil for a few minutes and then remove the garlic.
  4. In the same pan, cook the seabream fillets for about 2-3 minutes per side, depending on thickness, until golden brown and cooked through.
  5. Lightly toast the slices of homemade bread in the oven or on a grill.
  6. Place the tomato slices on the bread, add a pinch of salt, oregano, and some hand-torn basil leaves.
  7. Place the cooked seabream fillets on a slice of bread and distribute some chopped black olives and rinsed and desalted capers on the same slice.
  8. Finish with another drizzle of extra virgin olive oil and close the sandwich with another slice of bread.
  9. Your Sicilian seabream sandwich is ready to be enjoyed.
