Pasta with Stracchino, Bresaola and Cherry Tomatoes

I will be pleased to assist you with the recipe for a delicious pasta with stracchino, bresaola, and cherry tomatoes. It is a simple but flavorful dish, combining the elegance of bresaola with the creaminess of stracchino and the freshness of cherry tomatoes. Here is the recipe:

Ingredients

  • 320 g of pasta of choice (penne, farfalle, or spaghetti work well)
  • 150 g of stracchino cheese
  • 100 g of bresaola, sliced
  • 200 g of cherry tomatoes
  • Extra virgin olive oil
  • Salt
  • Black pepper (optional)
  • Fresh basil for garnishing (optional)
  • 1 clove of garlic (optional)

Preparation

  1. Boil a large pot of salted water. When it comes to a boil, cook the pasta according to the package instructions until “al dente”.

  2. Meanwhile, wash the cherry tomatoes and cut them in half or into quarters depending on their size. You can sauté the tomatoes in a pan with a drizzle of oil and a clove of garlic for a few minutes if you prefer to add a flavor twist, or leave them raw for extra freshness in the dish.

  3. Cut the bresaola into strips or pieces and set aside.

  4. In a large bowl, mash the stracchino with a fork to soften it and make it easier to blend.

  5. Drain the pasta and reserve some of the cooking water.

  6. Remove the garlic from the tomatoes if you chose to sauté them, and pour the pasta into the bowl with the stracchino.

  7. Add the cherry tomatoes and bresaola. Gently mix, adding a couple of tablespoons of the pasta cooking water to make it creamier. Season with salt, and if desired, add a pinch of black pepper.

  8. Plate and garnish with fresh basil leaves, if desired.

  9. Serve immediately to retain the creaminess and freshness of the ingredients.

Curiosity

Bresaola, typical of the Valtellina in Lombardy, is a salted and cured meat that is consumed raw. It contrasts wonderfully with the sweetness of stracchino and the acidity of the cherry tomatoes, creating a very pleasant balance of flavors for the palate.

It is a dish that can be easily customized: for example, for a spicier note, you could add some chili pepper, or replace stracchino with another soft and spreadable cheese according to your personal taste.
