Pasta with Stracchino, Bresaola and Cherry Tomatoes

Ingredients

- 150 g of stracchino cheese
- 100 g of bresaola, sliced
- 200 g of cherry tomatoes
- Extra virgin olive oil
- Salt
- Black pepper (optional)
- Fresh basil for garnishing (optional)
- 1 clove of garlic (optional)
Preparation

Boil a large pot of salted water. When it comes to a boil, cook the pasta according to the package instructions until “al dente”.

Meanwhile, wash the cherry tomatoes and cut them in half or into quarters depending on their size. You can sauté the tomatoes in a pan with a drizzle of oil and a clove of garlic for a few minutes if you prefer to add a flavor twist, or leave them raw for extra freshness in the dish.

Cut the bresaola into strips or pieces and set aside.

In a large bowl, mash the stracchino with a fork to soften it and make it easier to blend.

Drain the pasta and reserve some of the cooking water.

Remove the garlic from the tomatoes if you chose to sauté them, and pour the pasta into the bowl with the stracchino.

Add the cherry tomatoes and bresaola. Gently mix, adding a couple of tablespoons of the pasta cooking water to make it creamier. Season with salt, and if desired, add a pinch of black pepper.
