Shrimp Salad with Yogurt Sauce

Ingredients
- 400 g of peeled and cleaned shrimps
- 2 teaspoons of extra virgin olive oil
- Salt and pepper to taste
- 1 lemon (juice)
- 150 g of Greek yogurt
- 1 teaspoon of Dijon mustard
- 1 tablespoon of chopped fresh dill (or parsley, if you prefer)
- 1 tablespoon of finely chopped red onion
- Mixed salad (for example, lettuce, arugula, baby spinach)
- 1 ripe avocado, sliced
- Cherry tomatoes, halved
Preparation
- In a large skillet, heat the extra virgin olive oil and cook the shrimp for about 2-3 minutes per side, until they turn pink and are cooked. Season with salt and pepper to taste, then sprinkle with fresh lemon juice. Set aside to cool.
- In a bowl, combine Greek yogurt, Dijon mustard, chopped dill, and red onion. Adjust seasoning with salt and pepper, then mix well to create the yogurt sauce.
- In a salad bowl, arrange the mixed greens as a base, add the cooled shrimp, sliced avocado, and cherry tomatoes.
- Pour over the prepared yogurt sauce on the shrimp and salad.
- Serve immediately, chilled.
