Shrimp and Zucchini Canapés

Ingredients

  • Baguette or homemade bread, sliced
  • 200 g of cleaned shrimp
  • 1 medium zucchini
  • 1 clove of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley
  • Softened butter (optional)

Preparation

  1. Start by heating a drizzle of extra virgin olive oil in a pan. Add the crushed garlic clove and let it brown to flavor the oil, then remove it.

  2. Cut the zucchini into thin rounds or julienne and sauté in the pan over medium-high heat until it becomes tender yet still crisp.

  3. Add the shrimp to the same pan and cook until they become pink and opaque, about 2-3 minutes per side. Season with salt, pepper, and a bit of chopped parsley.

  4. Meanwhile, lightly toast the bread slices in the oven or on a hot grill to make them crispy.

  5. If you wish, you can spread a thin layer of softened butter on the toasted bread for an additional touch of richness.

  6. Place one or two zucchini rounds (or a little bit of julienne) on the bread slice, then lay the shrimp on top.

  7. Garnish each canapé with an additional sprinkle of fresh parsley and, if you like, a few drops of lemon for a touch of freshness.

  8. Serve the canapés immediately, to enjoy the crispiness of the bread contrasting with the soft shrimp and zucchini.
