Shrimp and Zucchini Skewers

Ingredients

  • 400 g of peeled and cleaned shrimp
  • 2 medium-sized zucchinis
  • 1 untreated lemon
  • Extra virgin olive oil as needed
  • Salt and pepper as needed
  • Aromatic herbs (such as parsley or basil) to taste
  • Wooden or metal skewers

Preparation

  1. Start by soaking the wooden skewers in water for about 30 minutes to prevent them from burning during cooking.

  2. Wash the zucchinis, cut them into not too thick slices and grill them beforehand on a hot plate or grill so that they will already have a more intense flavor.

  3. In the meantime, shell the shrimp (if they are not already cleaned) by removing the shell and the intestine and wash them under cold running water.

  4. Dry the shrimp well with kitchen paper and the grilled zucchinis.

  5. Lightly rub the shrimp with lemon zest to flavor them and moisten them with a bit of lemon juice.

  6. Thread the shrimp and zucchini slices alternately onto the skewers.

  7. Season the skewers with extra virgin olive oil, salt, pepper, and if desired, with finely chopped aromatic herbs.
