Spaghetti with Shrimp Ragu and Olives
17/11/2023Spaghetti with shrimp ragu and olives is a dish rich in Mediterranean flavors that fits perfectly into the Italian culinary tradition with a touch of originality. Here is the recipe.
Ingredients
- 320 grams of spaghetti
- 300 grams of shrimp (fresh or frozen)
- 150 grams of olives (preferably black, pitted)
- 2 cloves of garlic
- 200 ml of tomato puree
- Half a glass of white wine
- Fresh parsley to taste
- Extra virgin olive oil to taste
- Salt and pepper to taste
Preparation
- If the shrimp are frozen, allow them to thaw. Clean the shrimp by removing the shell and the intestinal thread. Set aside.
- Bring a pot of salted water to a boil for the spaghetti.
- While the water is reaching a boil, take a wide pan and gently fry the garlic cloves in the extra virgin olive oil.
- Once the garlic is golden, add the shrimp to the pan and sauté them briefly. Deglaze with the white wine and let the alcohol evaporate.
- Add the sliced olives and the tomato puree. Let everything cook on medium-low heat, covered, for about 10 minutes. Adjust the salt and pepper.
- In the meantime, cook the spaghetti in the boiling water according to the time indicated on the package to achieve an al dente texture.
- Drain the spaghetti while retaining some of the cooking water and transfer them into the pan with the shrimp ragu. Mix well to flavor and, if necessary, add some cooking water to make the sauce creamier.
- Plate the spaghetti with shrimp ragu and olives, sprinkle with chopped fresh parsley, and serve immediately.
Curiosities

Remember that you can always personalize the recipe according to your tastes: for instance, you could add chili pepper if you like spicier flavors, or use different aromatic herbs like basil or dill to give a unique note to your dish. Enjoy your meal!
