Preparation

  1. Start by preparing the egg pasta: arrange the flour in a mound on a work surface, crack the eggs into the center, and start mixing until you achieve a smooth dough. Knead the dough for about 10 minutes, then cover it with cling film and let it rest for 30 minutes.
  2. For the filling, clean the shrimp by removing the shell and intestine, then chop coarsely. In a pan, sauté the garlic with a little oil, add the chopped shrimp, grated lemon zest, salt, and pepper, and cook for a few minutes. At the end of cooking, add the chopped parsley and let it cool.
  3. When the shrimp are cool, combine them with the grated Parmesan cheese and mix well. This will be your filling.
  4. Roll out the dough with a rolling pin or a pasta machine until it is thin. Place small amounts of filling on the dough at regular intervals, then cover with another layer of pasta. Make sure to seal the edges well and cut out the ravioli with a serrated wheel or a mold.
  5. Cook the ravioli in boiling salted water for about 3-4 minutes or until they float to the surface.
  6. Meanwhile, in a pan, melt some butter and add the lemon juice. Drain the ravioli and sauté them briefly in the pan with this butter and lemon emulsion.
  7. Serve the ravioli hot, garnished with fresh basil or thyme leaves and, if desired, a sprinkle of Parmesan cheese.
