- Extra virgin olive oil
- Salt and pepper to taste
- Herbs of choice, such as rosemary or bay leaf
Ingredients for the Pasta:
- 400 g of short mafalde or another short pasta
Preparation for the Sauce:
-
In a large saucepan, heat the extra virgin olive oil and sauté the onion and garlic until translucent.
-
Add the ground meat and cook over medium-high heat until it is well browned and crumbly.
-
Add the carrots and celery and continue to cook until the vegetables begin to soften.
-
Deglaze the meat with red wine and let the alcohol evaporate.
-
Add the tomato puree and tomato paste if using; season with salt, pepper, and add the aromatic herbs.

Bring the sauce to a boil, then reduce the heat and let it simmer with the lid partially open for at least 1-2 hours, adding water or broth if the sauce reduces too much.

-
When the sauce is almost ready, bring a pot with plenty of salted water to a boil for the pasta.
-
Cook the short mafalde according to the instructions on the package until al dente.
-
Drain the pasta well and set aside some of the cooking water.
-
Mix the mafalde with the meat sauce, adding a little cooking water if the sauce is too thick.
Serve the Short Mafalde with Meat Sauce hot, with a generous sprinkling of grated Parmesan or Pecorino Romano. This classic comfort food can easily be personalized by adding mushrooms, peas, or other ingredients of your choice. Enjoy your meal!
