Short Mafalde with Meat Sauce

Short Mafalde with Meat Sauce is a tasty pasta dish with a rich and substantial sauce. Here’s how to prepare it:

Ingredients for the Meat Sauce:

  • 400 g of ground meat (choose between beef, pork, or a mix)
  • 1 large onion, finely chopped
  • 2 cloves of garlic, chopped
  • 2 carrots, peeled and chopped
  • 1 stalk of celery, chopped
  • 800 g of tomato puree
  • 1 glass of red wine
  • 2 tablespoons of tomato paste (optional)
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Herbs of choice, such as rosemary or bay leaf

Ingredients for the Pasta:

  • 400 g of short mafalde or another short pasta

Preparation for the Sauce:

  1. In a large saucepan, heat the extra virgin olive oil and sauté the onion and garlic until translucent.

  2. Add the ground meat and cook over medium-high heat until it is well browned and crumbly.

  3. Add the carrots and celery and continue to cook until the vegetables begin to soften.

  4. Deglaze the meat with red wine and let the alcohol evaporate.

  5. Add the tomato puree and tomato paste if using; season with salt, pepper, and add the aromatic herbs.

  6. Bring the sauce to a boil, then reduce the heat and let it simmer with the lid partially open for at least 1-2 hours, adding water or broth if the sauce reduces too much.

Cooking the Pasta:

  1. When the sauce is almost ready, bring a pot with plenty of salted water to a boil for the pasta.

  2. Cook the short mafalde according to the instructions on the package until al dente.

  3. Drain the pasta well and set aside some of the cooking water.

  4. Mix the mafalde with the meat sauce, adding a little cooking water if the sauce is too thick.
