Seafood with Steamed Vegetables and Citrus Mayonnaise
17/11/2023Here’s a refreshing recipe that blends the flavor of the sea with the lightness of steamed vegetables and the citrusy note of homemade mayonnaise.
Ingredients
- 400 g of selected seafood (shrimp, langoustines, crab, etc.)
- 200 g of assorted vegetables suited for steaming (carrots, zucchini, broccoli, cauliflower, etc.)
- 2 egg yolks
- 150 ml of seed oil or extra virgin olive oil
- 1 lemon (zest and juice)
- 1 orange (zest and juice)
- Salt and pepper to taste
- Aromatic herbs (parsley or cilantro), optional for garnish
Preparation
- Start with the citrus mayonnaise. In a bowl, beat the egg yolks and slowly add the oil, drop by drop at the beginning, until reaching a thick and homogeneous consistency.
- Finely grate the zest of the lemon and orange, being careful not to include the white part, and add it to the mayonnaise along with a couple of tablespoons of juice from both fruits. Mix well and adjust the seasoning with salt and pepper. Put the mayonnaise in the refrigerator.
- Moving on to the seafood. If necessary, clean and wash them. For shrimp and langoustines, remove the shell and the intestinal thread.
- Cut the vegetables into uniform sizes to facilitate even cooking.
- Bring the water to a boil in a pot for steaming. Add the seafood and vegetables into the steaming baskets, being careful not to overlap them too much, and cook for about 5-7 minutes, depending on the size of the seafood and vegetables.
- Once cooked, arrange them on a plate and season lightly with salt and pepper.
- Serve the seafood and steamed vegetables with the citrus mayonnaise and, if desired, with a sprinkling of fresh aromatic herbs.
