Seasonal Ricotta and Vegetable Puff Pastry

Ingredients

  • 1 rectangular roll of puff pastry
  • 250 g of fresh ricotta
  • 200 g of seasonal vegetables (zucchini, peppers, asparagus, spinach, etc.)
  • Salt and pepper to taste
  • Extra virgin olive oil
  • 1 clove of garlic
  • Aromatic herbs to taste (basil, thyme, rosemary, etc.)
  • 1 egg for brushing
  • Sesame or poppy seeds (optional)

Preparation

  1. Pre-heat the oven to 200 °C.
  2. Clean and cut the vegetables into small pieces. In a non-stick pan, heat a drizzle of olive oil with the garlic clove. Sauté the vegetables until they become tender, adding salt and pepper to taste. Add the finely chopped aromatic herbs as well.
  3. In a bowl, mix the ricotta with the cooked vegetables, making sure to remove the garlic clove.
  4. Unroll the puff pastry on a baking tray lined with parchment paper. Spread the ricotta and vegetable mixture in the center of the pastry, leaving a free edge around.
  5. Fold the edges of the pastry towards the center, partially covering the filling. You can leave the puff pastry open or close it completely, according to your preferences.
  6. Beat the egg and brush the surface of the puff pastry. If you wish, sprinkle with sesame or poppy seeds for a crunchy touch.
  7. Bake in the oven for about 20-25 minutes or until the puff pastry is golden and crispy.
  8. Allow to cool slightly before serving.

If you do not have some of the listed vegetables, you can substitute them with other vegetables that you prefer or that you find in season.
