Puff Pastry with Potatoes and Onions

The rustic puff pastry tart with potatoes and onions is a classic Italian dish, ideal for a hearty meal or as an appetizer. Here is the recipe.

Ingredients

  • 1 roll of ready-made puff pastry
  • 3-4 medium potatoes
  • 2 large onions
  • Extra virgin olive oil to taste
  • Salt to taste
  • Black pepper to taste
  • Fresh rosemary (optional)
  • 1 egg (for brushing, optional)

Preparation

  1. Start by preheating the oven to 180 °C.
  2. Peel the potatoes and slice them thinly. Also, slice the onions.
  3. In a pan, heat a drizzle of olive oil and sauté the onions until they are soft and slightly golden.
  4. Add the potato slices, salt, and pepper. If you wish, you can also add some chopped fresh rosemary. Cook until the potatoes are partially done but still a bit al dente.
  5. Unroll the puff pastry and place it on a baking tray, preferably lined with parchment paper. Prick the base with a fork to prevent it from puffing up during baking.
  6. Spread the mix of potatoes and onions on the puff pastry, leaving a margin at the edge.
  7. Slightly fold the edges of the puff pastry over the filling to create a rustic effect and seal the edges.
  8. If you desire a more golden and crispy surface, brush the pastry with a beaten egg.
  9. Bake the rustic tart for about 25-30 minutes or until the puff pastry is golden brown and crispy.
  10. Remove from the oven and let it cool slightly before serving.

This recipe is perfect for customization with additional ingredients, such as grated cheese, speck, or other aromatic herbs, according to your tastes. You can serve the puff pastry with potatoes and onions either as a main course accompanied by a fresh green salad or as an appetizer in small squares.
