Seitan with Pepper

Seitan with pepper is a vegan dish that offers a protein-rich alternative to meat. Here’s how to prepare it:

Ingredients

  • 400 g of seitan in slices or cubes
  • 1 large onion, thinly sliced
  • 2 cloves of garlic, finely chopped
  • 1 teaspoon of whole black peppercorns or 1/2 teaspoon of ground black pepper
  • Salt to taste
  • Whole wheat flour or other flour of choice for dredging
  • 2 tablespoons of soy sauce
  • 200 ml of vegetable broth
  • Extra virgin olive oil or other vegetable oil
  • Chopped fresh parsley for garnish
  • A pinch of chili flakes (optional)

Preparation

  1. Cut the seitan into slices or cubes if it is not already pre-cut.

  2. On a plate, mix some flour with salt and roughly crushed peppercorns (or ground pepper).

  3. Dredge the seitan slices/cubes in the seasoned flour until lightly covered.

  4. In a pan, heat the oil and sauté the onion until it becomes translucent.

  5. Add the garlic (and chili flakes if using) and briefly brown it.

  6. Place the floured seitan in the pan and brown it until golden on all sides.

  7. Deglaze with soy sauce and let the alcohol evaporate for a few minutes.

  8. Add the vegetable broth and cook over medium-low heat until the sauce reduces and thickens, forming a gravy.

  9. Adjust the salt if necessary.

  10. Serve the seitan with pepper hot, sprinkled with chopped fresh parsley.

Seitan with pepper can be accompanied by a side of stewed vegetables or a portion of whole grains such as basmati rice or quinoa. Enjoy your meal!
