- 500 g seitan

Preparation

- Remove the seitan from the pot and set it aside.
- In the same pot, add a little more oil if necessary and sauté the finely chopped onion along with the crushed garlic cloves.
- Once the onion has become translucent, add the sliced carrots, the bell pepper cut into pieces, and the diced zucchini.
- Let the vegetables stew for a few minutes, then add the browned seitan.
- Deglaze with red wine and allow the alcohol to evaporate.
- Add the tomato paste and mix well.
- Pour in the vegetable broth, adjust the salt and pepper, and add the chosen aromatic herbs.
- Cover the pot and let it stew over medium-low heat for about 30-40 minutes, until the vegetables are tender and the seitan is well-flavored.
- If the liquid reduces too much during cooking, add more vegetable broth or hot water.
- Taste and adjust the salt and pepper if necessary.
Serve the stew hot, possibly accompanied by a side of baked potatoes or polenta.
