Seitan Cutlets
17/11/2023Here’s the recipe for Milanese-style seitan cutlets with an Italian twist on plant flavors.
Ingredients
- 4 slices of seitan (about 100-150 grams per slice)
- 100 grams of breadcrumbs
- 2 tablespoons of chickpea flour
- Water as needed (about 50 ml to create a batter)
- Salt to taste
- Pepper to taste
- A pinch of nutmeg
- Seed oil for frying
Preparation

Start by preparing the “batter” with the chickpea flour and water, season with salt and pepper. The consistency should be quite liquid but not too much, so as to adhere well to the seitan.

Slice the seitan if it’s too thick; it should be about half a centimeter thick.

Dip the seitan slices in the batter, ensuring they are well coated.

In a deep plate, pour the breadcrumbs and season with salt, pepper, and a sprinkle of nutmeg to give more aroma to the bread.

Coat the seitan slices soaked in the batter with the breadcrumbs, pressing well on both sides to make the bread stick.

In a frying pan, heat plenty of seed oil. When the oil reaches the ideal temperature (around 170-180°C), fry the seitan cutlets until they are golden on both sides.

Drain them and place them on paper towels to remove excess oil.

Serve the cutlets while they’re hot.
Milanese-style seitan cutlets can be accompanied by a side of baked potatoes or a fresh seasonal salad. For a more Italian touch, it might be pleasant to add a bit of grated vegan parmesan to the batter, if your diet allows, to give more flavor and a taste reminiscent of Italian cuisine.
