Seared Scallops with Caramelized Onion

Seared scallops with caramelized onion is a sophisticated and delicious dish. Here is the recipe with an Italian twist:

Ingredients

  • 12 fresh and clean scallops
  • 2 Tropea red onions (or other sweet red onions)
  • 4 tablespoons of brown sugar
  • 4 tablespoons of Modena balsamic vinegar
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Butter as needed
  • A few sprigs of fresh thyme (optional)

Preparation

  1. Start with the caramelized onion: thinly slice the onions and put them in a pan with a drizzle of extra virgin olive oil over medium-low heat. Add a pinch of salt and let the onions wilt until they become translucent.

  2. Add the brown sugar to the onions and stir until it begins to dissolve. Then add the balsamic vinegar and continue cooking, stirring occasionally, until you get a jam-like consistency. If necessary, add a little water to prevent the onions from burning.

  3. Meanwhile, in another pan, heat some butter and a drizzle of extra virgin olive oil over medium-high heat.

  4. Pat the scallops dry with paper towels, then season them with salt and pepper.

  5. Once the butter starts to foam, place the scallops in the pan. Let them cook without moving for about 1-2 minutes, until a golden crust forms.

  6. Gently turn the scallops over and cook them for another minute on the opposite side.

  7. Serve the scallops immediately on a bed of caramelized onion and, if desired, garnish with a few fresh thyme leaves.

This dish pairs very well with a slightly fruity and tart white wine like a Vermentino from Sardinia. The freshness of the wine complements the sweetness of the caramelized onions and the delicacy of the scallops.

Curiosity

Tropea onions are famous for their sweet and delicate flavor, making them ideal for caramelization. Moreover, scallops are a highly appreciated mollusk in Italian cuisine, often featured in the menus of seafood restaurants and festive banquets.
