Seafood Salad in Jar Cooking

Seafood salad in jar cooking is an innovative and delicate way to prepare a seafood appetizer that retains all the flavor and nutritional properties of the ingredients. Here is the recipe using the Italian method.

Ingredients

  • 200 g of cleaned squid
  • 200 g of peeled shrimp
  • 200 g of cleaned mussels
  • 200 g of octopus
  • 1 carrot
  • 1 stalk of celery
  • 1 clove of garlic
  • Chopped parsley as needed
  • Lemon juice as needed
  • Extra virgin olive oil as needed
  • Salt and pepper as needed

Preparation

  1. Prepare the ingredients: clean the octopus and the squid if they are not already, cut the octopus into pieces and the squid into rings or strips. Clean and finely dice the carrot and celery.

  2. Place the seafood in heat-proof glass jars (glass jars with airtight closure), dividing the octopus, squids, mussels, and shrimp evenly.

  3. Add to each jar the carrot, celery, and a whole clove of garlic.

  4. Season with a pinch of salt, pepper, a drizzle of extra virgin olive oil, and some chopped parsley.

  5. Close the jars tightly and place them in a tall and wide pot.

  6. Fill the pot with water until the jars are about 3/4 submerged.

  7. Bring the water to a gentle boil and cook for about 30-40 minutes. Cooking time may vary depending on the size and thickness of the fish pieces.

  8. Once cooked, remove the jars from the water and let them cool.

  9. Open the jars and dress your seafood salad with fresh lemon juice and another drizzle of extra virgin olive oil before serving.

Curiosity

The jar cooking technique allows for cooking food in its own liquid at a moderate temperature, making it particularly tender and flavorful while also retaining all the nutritional properties of the foods. Moreover, it is a cooking method that reflects the Italian tradition of using gentle and patient techniques to enhance ingredients.
