Seafood Salad

Seafood salad is a cold appetizer that is highly appreciated, especially during the summer period, but can be enjoyed at any time of the year. Here are the ingredients and the procedure for preparing it.

Ingredients

  • 500 g of mixed seafood (squid, octopuses, cuttlefish, mussels, shrimps, etc.)
  • 1 clove of garlic
  • Parsley to taste
  • Juice of 1 lemon
  • Extra virgin olive oil to taste
  • Salt to taste
  • Pepper to taste (optional)

Preparation

  1. Clean and thoroughly wash the various shellfish and crustaceans you have chosen for your seafood salad. If you are using shellfish, such as mussels, remember to remove their shells after cooking.
  2. In a large pot, bring salted water to a boil and cook the seafood. The cooking time varies depending on the type: octopuses and squid require longer times (20-30 minutes), while shrimps only take a few minutes. Remember not to overcook them to avoid them becoming too tough.
  3. Drain the seafood and let it cool. Meanwhile, prepare an emulsion with extra virgin olive oil, lemon juice, chopped parsley, and, if you like, a crushed clove of garlic.
  4. In a large bowl, dress the seafood with the prepared emulsion, adjust for salt and pepper, and let it season in the refrigerator for at least a couple of hours.
  5. Before serving, make sure to remove the garlic clove and garnish with some freshly chopped parsley.
