Paella de marisco
17/11/2023Paella de marisco is a traditional Spanish dish that includes a variety of seafood. I will offer you a classic recipe, but with an Italian twist.
Ingredients
- 400 g of bomba or arborio rice (as an Italian variant you can use carnaroli)
- 1 liter of fish broth
- 200 g of shrimp
- 200 g of mussels
- 200 g of squids
- 100 g of peas (optional)
- 1 red bell pepper, sliced
- 2 ripe tomatoes, chopped
- 2 cloves of garlic, minced
- 1 small onion, minced
- 1 sachet of saffron or some threads
- Extra virgin olive oil
- Salt and pepper to taste
- A bunch of chopped parsley (Italian addition)
- 1 lemon cut into wedges for garnishing
Preparation
- In a paella or a large non-stick frying pan, heat a drizzle of olive oil and sauté the onion and garlic until they become translucent.
- Add the red bell pepper and sauté for a few minutes.
- Add the chopped tomatoes and cook for another 5 minutes.
- Add the squid cut into rings and let it flavor for a couple of minutes.
- Add the rice and toast it until it becomes translucent, then add the saffron.
- Pour the hot fish broth, adjust with salt and pepper, and cook over medium-high heat for about 10-15 minutes.
- Without stirring, distribute the shrimp, mussels, and peas over the rice.
- Let it cook until the rice is tender but still al dente and the broth has been absorbed (about another 10-15 minutes).
- Remove the pan from the heat and cover it with a kitchen towel. Let it rest for 5 minutes before serving.
- Garnish with chopped parsley and lemon wedges.
You might want to serve the paella with a splash of lemon to enhance the seafood flavors.
