Paella de marisco

Paella de marisco is a traditional Spanish dish that includes a variety of seafood. I will offer you a classic recipe, but with an Italian twist.

Ingredients

  • 400 g of bomba or arborio rice (as an Italian variant you can use carnaroli)
  • 1 liter of fish broth
  • 200 g of shrimp
  • 200 g of mussels
  • 200 g of squids
  • 100 g of peas (optional)
  • 1 red bell pepper, sliced
  • 2 ripe tomatoes, chopped
  • 2 cloves of garlic, minced
  • 1 small onion, minced
  • 1 sachet of saffron or some threads
  • Extra virgin olive oil
  • Salt and pepper to taste
  • A bunch of chopped parsley (Italian addition)
  • 1 lemon cut into wedges for garnishing

Preparation

  1. In a paella or a large non-stick frying pan, heat a drizzle of olive oil and sauté the onion and garlic until they become translucent.
  2. Add the red bell pepper and sauté for a few minutes.
  3. Add the chopped tomatoes and cook for another 5 minutes.
  4. Add the squid cut into rings and let it flavor for a couple of minutes.
  5. Add the rice and toast it until it becomes translucent, then add the saffron.
  6. Pour the hot fish broth, adjust with salt and pepper, and cook over medium-high heat for about 10-15 minutes.
  7. Without stirring, distribute the shrimp, mussels, and peas over the rice.
  8. Let it cook until the rice is tender but still al dente and the broth has been absorbed (about another 10-15 minutes).
  9. Remove the pan from the heat and cover it with a kitchen towel. Let it rest for 5 minutes before serving.
  10. Garnish with chopped parsley and lemon wedges.

You might want to serve the paella with a splash of lemon to enhance the seafood flavors.
