Couscous mare e zafferano
17/11/2023Saffron Sea Couscous is a dish that combines the flavors of the sea with the exotic aroma of saffron. Here’s how to prepare this delicious dish.
Ingredients
- 200 g of couscous
- 500 ml of fish broth
- A pinch of saffron threads or powder
- 200 g of assorted seafood (for example, mussels, shrimp, clams, squid)
- 1 clove of garlic
- Fresh parsley to taste
- Extra virgin olive oil
- Salt and pepper to taste
- 1 glass of white wine (optional)
Preparation
- In a saucepan, bring the fish broth to a boil and dissolve the saffron.
- Pour the couscous into a pot and add the hot saffron broth. Cover and let it rest for about 5 minutes, then fluff it with a fork.
- In another pan, lightly fry the garlic clove in extra virgin olive oil.
- Add the seafood and cook until they are well opened (if using wine, add it and let it evaporate).
- Once the seafood is cooked, remove the garlic clove and season with salt and pepper.
- Combine the seafood with the fluffed couscous and mix gently.
- Transfer the Saffron Sea Couscous to a serving dish and sprinkle with chopped fresh parsley.
If you wish, you can enrich the dish with a drizzle of raw extra virgin olive oil and serve it hot. Additionally, for an Italian twist, you could add cherry tomatoes to give a touch of freshness and color.
