Couscous mare e zafferano

Saffron Sea Couscous is a dish that combines the flavors of the sea with the exotic aroma of saffron. Here’s how to prepare this delicious dish.

Ingredients

  • 200 g of couscous
  • 500 ml of fish broth
  • A pinch of saffron threads or powder
  • 200 g of assorted seafood (for example, mussels, shrimp, clams, squid)
  • 1 clove of garlic
  • Fresh parsley to taste
  • Extra virgin olive oil
  • Salt and pepper to taste
  • 1 glass of white wine (optional)

Preparation

  1. In a saucepan, bring the fish broth to a boil and dissolve the saffron.
  2. Pour the couscous into a pot and add the hot saffron broth. Cover and let it rest for about 5 minutes, then fluff it with a fork.
  3. In another pan, lightly fry the garlic clove in extra virgin olive oil.
  4. Add the seafood and cook until they are well opened (if using wine, add it and let it evaporate).
  5. Once the seafood is cooked, remove the garlic clove and season with salt and pepper.
  6. Combine the seafood with the fluffed couscous and mix gently.
  7. Transfer the Saffron Sea Couscous to a serving dish and sprinkle with chopped fresh parsley.

If you wish, you can enrich the dish with a drizzle of raw extra virgin olive oil and serve it hot. Additionally, for an Italian twist, you could add cherry tomatoes to give a touch of freshness and color.
