  2. Clean and cut the bell peppers into pieces similar in size to the seafood you are using.
  3. Prepare a marinade by mixing in a bowl the lemon juice, extra virgin olive oil, crushed garlic, parsley, salt, and pepper.
  4. Place the seafood in a bowl and pour the marinade over it. Let it marinate for about 15-30 minutes in the refrigerator.
  5. Thread alternatively on each skewer bell peppers and seafood, evenly distributing the various types.
  6. Heat the grill or barbecue to medium-high temperature.
  7. Cook the skewers for about 3-5 minutes on each side, or until the seafood turns pink and is cooked, yet still juicy.
  8. Occasionally baste with the remaining marinade during cooking to keep the skewers moist and flavored.
