Sea and Mountain Gnocchetti

Ingredients

  • 400 g of gnocchetti (or potato gnocchi)
  • 200 g of shelled shrimps
  • 200 g of fresh porcini mushrooms (or champignons if not available)
  • 1 clove of garlic
  • Fresh parsley to taste
  • Extra virgin olive oil
  • Salt and pepper to taste
  • 100 ml of cooking cream (optional)
  • Dry white wine to taste

Preparation

  1. Clean the porcini mushrooms with a damp cloth or a kitchen brush to remove any dirt residues. Slice them not too thinly.
  2. In a large skillet, heat a drizzle of extra virgin olive oil and add the whole garlic clove. Let it brown to flavor the oil, then remove it.
  3. Add the mushrooms to the skillet and let them cook over medium heat for about 5-7 minutes, until they release their water.
  4. Add the shelled shrimps to the mushrooms, let them take on some color, and then deglaze with a bit of white wine. Allow the alcohol to evaporate, then lower the heat and continue cooking for another 4-5 minutes. If you decide to use cream, add it at this stage.
  5. Season with salt and pepper and add some chopped parsley.
  6. In the meantime, cook the gnocchetti in abundant salted water following the instructions on the package until they float.
  7. Drain the gnocchetti and transfer them into the skillet with the sea and mountain sauce, tossing them for a minute to flavor everything.
  8. Serve the Sea and Mountain Gnocchetti hot, garnishing with additional chopped parsley.
