Flatbread with Tomatoes and Ricotta

Preparation
- Start by preheating the oven to 200 °C.
- In the meantime, wash and cut the tomatoes into slices or cubes, as you prefer.
- Lay the flatbread on a baking sheet. If you want, you can lightly heat it alone before adding the ingredients, to make it crisper.
- Distribute the chopped tomatoes on top of the flatbread. Add some salt and pepper to taste.
- Put the flatbread in the hot oven and let it cook for about 5-10 minutes or until the tomatoes are slightly roasted.
- While the flatbread is cooking, prepare the ricotta by seasoning it with a drizzle of extra virgin olive oil, salt, and pepper (you can also add some herbs if you like them).
- Once the flatbread is ready, remove it from the oven and spread the seasoned ricotta on top.
- If you wish, you can finish with an additional drizzle of oil and some fresh basil leaves to add color and fragrance.
Serve the flatbread hot, or let it cool down a bit before serving. This dish is simple yet delicious and can be customized in many ways. For example, you might add chopped olives, capers, or even a touch of anchovies for a more savory variant.
