Schiaffoni (or Paccheri) with Seafood
17/11/2023I can guide you in preparing the Seafood Schiaffoni, a rich and flavorful dish perfect for a special occasion or simply to enjoy the flavors of the sea. Here is the recipe:
Ingredients
- 500g of schiaffoni or paccheri
- 300g of mixed seafood (squid, cuttlefish, mussels, and shrimp)
- 200g of peeled tomatoes
- 2 cloves of garlic
- 1 glass of white wine
- Fresh parsley
- Extra virgin olive oil
- Salt and pepper to taste
Preparation
- In a large pan, sauté the garlic with extra virgin olive oil. When the garlic becomes golden, remove it to prevent burning.
- Add the seafood to the pan and sauté for a few minutes. Deglaze with the white wine and allow the alcohol to evaporate.
- Add the previously crushed peeled tomatoes and let the sauce cook for about 15-20 minutes over medium-low heat until it is reduced and flavorful. Adjust with salt and pepper.
- Meanwhile, bring a pot of ample salted water to a boil and cook the schiaffoni according to the package instructions to achieve al dente pasta.
- Once the pasta is cooked, drain it and pour it into the pan with the seafood sauce. Toss the pasta in the sauce for a minute so that the schiaffoni can absorb all the flavors.
- Finish by adding chopped fresh parsley and mix well.
Serve the Seafood Schiaffoni hot, garnishing the dish with some whole shrimp or a sprig of parsley for a touch of color.
Interesting Facts
Schiaffoni, also known as paccheri, are a type of pasta typical of the Campania region. Their name seems to derive from the Neapolitan term “paccarià,” which means “slap.” Their large and spacious shape is ideal for capturing rich sauces and hearty condiments such as those based on seafood. The resulting dish is a perfect example of how Italian cuisine can enhance the flavors of the sea with simplicity and elegance.
