Schiacciate with Spicy Broccoli Rabe and Sausage
17/11/2023I can guide you in preparing schiacciate with spicy broccoli rabe and sausage, a tasty variant that combines the flavors of Italian tradition. If you don’t like spicy food, you can always omit the chili pepper from the recipe.
Ingredients
- 500 g of pizza dough (you can use the ready-made one or prepare it yourself)
- 300 g of broccoli rabe
- 200 g of pork sausage
- 2 cloves of garlic
- Chili powder or fresh chili to taste
- Extra virgin olive oil
- Salt
Preparation
-
Clean the broccoli rabe by removing the tougher leaves and stems. Wash the broccoli rabe well and cook in boiling salted water for about 5 minutes. Once cooked, drain and squeeze to remove excess water.
-
In a pan, sauté the chopped garlic with a drizzle of extra virgin olive oil and the chili pepper. Add the crumbled sausage and let it brown until it’s well cooked.
-
Add the broccoli rabe into the pan with the sausage and continue to cook for a couple of minutes for the flavors to blend together. Adjust with salt if necessary.
-
Roll out the pizza dough into discs or oval shapes, according to your preference. Get some flour to keep the dough from sticking to your work surface.
-
Spread the mix of broccoli rabe and sausage on the pizza base, leaving a small free border around it.
-
Bake in a pre-heated oven at 220 °C until the edges of the schiacciata are golden and crispy, which should take about 15-20 minutes.
-
Once the schiacciata is ready, let it cool down for a few minutes before cutting and serving.
Curiosity
The schiacciata is a type of flatbread typical of Tuscan cuisine, often seasoned with olive oil and salt. The version with broccoli rabe and sausage combines the rustic, earthy flavors of the vegetables with the richness of the sausage, creating a hearty and satisfying dish.
