Ingredients
- 200g of high-quality fresh salmon (for the tartare)
- 2 fresh spring onions
- 1 tablespoon of extra virgin olive oil
- 1 sprig of fresh dill
- Juice of 1 lemon
- Salt and black pepper to taste
- Tuscan schiacciate or bread croutons to taste
Preparation
- Let’s start with the tartare: remove the skin and any bones from the salmon fillet and then finely chop it with a knife to obtain a tartare.
- Transfer the chopped salmon to a bowl and add lemon juice, extra virgin olive oil, salt and pepper. Gently mix together.
- Clean the spring onions by removing the outer part and roots, then chop them very finely and add them to the bowl with the salmon.
- Wash and finely chop the fresh dill, adding part of it to the salmon tartare and setting aside some for garnish.
- Cover the bowl with cling film and let it rest in the refrigerator for about 30 minutes so that the flavors blend well together.
- Meanwhile, lightly toast the Tuscan schiacciate or bread croutons until they are crispy.
- Remove the salmon tartare from the refrigerator and mix again.
- Place a small heap of tartare on top of each schiacciata or crouton, garnish with the fresh dill set aside and, if you like, add a drizzle of raw oil.
- Serve immediately to enjoy the crispness of the schiacciate contrasted with the softness of the tartare.
