Schiacciate with Salmon Tartare and Spring Onion

Ingredients

  • 200g of high-quality fresh salmon (for the tartare)
  • 2 fresh spring onions
  • 1 tablespoon of extra virgin olive oil
  • 1 sprig of fresh dill
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • Tuscan schiacciate or bread croutons to taste

Preparation

  1. Let’s start with the tartare: remove the skin and any bones from the salmon fillet and then finely chop it with a knife to obtain a tartare.
  2. Transfer the chopped salmon to a bowl and add lemon juice, extra virgin olive oil, salt and pepper. Gently mix together.
  3. Clean the spring onions by removing the outer part and roots, then chop them very finely and add them to the bowl with the salmon.
  4. Wash and finely chop the fresh dill, adding part of it to the salmon tartare and setting aside some for garnish.
  5. Cover the bowl with cling film and let it rest in the refrigerator for about 30 minutes so that the flavors blend well together.
  6. Meanwhile, lightly toast the Tuscan schiacciate or bread croutons until they are crispy.
  7. Remove the salmon tartare from the refrigerator and mix again.
  8. Place a small heap of tartare on top of each schiacciata or crouton, garnish with the fresh dill set aside and, if you like, add a drizzle of raw oil.
  9. Serve immediately to enjoy the crispness of the schiacciate contrasted with the softness of the tartare.
