Ingredients

  • 1 roll of ready-made puff pastry
  • 400 g of red radicchio
  • 250 g of sausage

  • 1 egg yolk (for brushing)

Preparation

  1. Preheat the oven to 180 °C.
  2. Clean the radicchio, removing the tougher outer leaves, and cut into thin strips.
  3. In a frying pan, sauté the finely chopped onion with a drizzle of extra virgin olive oil.
  4. Add the crumbled sausage, skinless, and let it brown until well cooked.
  5. Add the radicchio to the sausage, seasoning with salt and pepper to taste. Cook until the radicchio has wilted and the liquids have evaporated. Let cool slightly.
  6. Roll out the puff pastry and spread the radicchio and sausage mixture in the center, leaving about a 2 cm border.
  7. Sprinkle the grated cheese over the radicchio and sausage mixture.
  8. Fold the edges of the puff pastry inward to create a frame.
  9. Beat the yolk and brush the edges of the puff pastry to get a uniform browning during baking.
  10. Bake in the oven for about 20-25 minutes or until the puff pastry is golden and crispy.
  11. Let it cool for a few minutes before serving.
