Flatbreads with Castelmagno Cheese Flakes and Caramelized Onions

Ingredients

  • 500 g of pizza dough (you can use ready-made or prepare it yourself with flour, water, yeast, oil, and salt)
  • 200 g of Castelmagno DOP, grated or in flakes
  • 3 medium onions
  • 2 tablespoons of brown sugar
  • 2 tablespoons of balsamic vinegar
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Begin by preparing the caramelized onions. Thinly slice the onions and sauté them in a pan with a drizzle of extra virgin olive oil over low heat.
  2. Once the onions become translucent, add the brown sugar and mix well.
  3. Allow the sugar to melt and begin to caramelize for about 10 minutes, stirring occasionally.
  4. Add the balsamic vinegar, a pinch of salt and let the onions caramelize for another 5-10 minutes, until they take on a golden brown color and a soft texture. Then let them cool.
  5. Meanwhile, roll out the pizza dough to a thickness of about 5 mm forming circles or rectangles, according to your preference.
  6. Lightly brush the surface of the dough with extra virgin olive oil and sprinkle with a pinch of salt.
  7. Preheat the oven to 200 °C and, once hot, bake the pizza dough bases for about 10 minutes or until they start to lightly brown.
  8. Take out the bases and evenly distribute the caramelized onions on top, and then the Castelmagno flakes.
  9. Put the flatbreads back in the oven for another 5-7 minutes, until the cheese begins to melt and lightly brown.
  10. Serve the flatbreads hot, perhaps accompanied by a fresh salad or as an appetizer.
