Frightening Bull's Eye Muffins

Ingredients
- 250 g of all-purpose flour
- 120 g of granulated sugar
- 100 g of melted butter
- 120 ml of whole milk
- 2 large eggs
- 1 packet of baking powder
- 1 pinch of salt
- Apricot jam (for the “pupil”)
- Raspberry or strawberry jelly (for the “blood”)
- Unsweetened cocoa powder (for the “outline of the eye”)
- Dark chocolate (to create optional scary veins)
Preparation
- Preheat the oven to 180 °C and prepare a muffin pan by lining it with paper cups.
- In a bowl, mix the sifted flour with the baking powder and a pinch of salt.
- In another bowl, beat the eggs with the sugar until they become light and frothy.
- Add the melted butter and milk to the egg mixture, gently stirring.
- Combine the dry ingredients with the wet ones and mix until you get a smooth batter without overworking it.
- Fill the paper cups two-thirds with this batter.
- Bake in the oven for about 20 minutes or until the muffins are golden brown and well risen.
- Let the muffins cool before proceeding to decoration.
- Use a piping bag or a teaspoon to create a hollow at the top of each muffin and fill it with apricot jam, forming the “pupil.”
- Outline this hollow with a bit of cocoa powder sifted through a strainer to create the “outline of the eye.”
- Carefully add the raspberry or strawberry jelly around to simulate the “blood.”
- If you’re feeling creative, melt some dark chocolate and with the help of a toothpick, create “veins” on the white of the eye to make it even more frightening.
