Scaloppine in pink

Veal scaloppine in pink is a tasty dish that is easy to make, perfect for an elegant lunch or dinner. Here is the recipe that follows the Italian style.

Ingredients

  • 4 thin slices of veal (about 100-120 g each)
  • Flour, as needed for dusting the veal slices
  • 30 g of butter
  • 1 glass of rosé wine
  • Salt and pepper, to taste
  • 1 tablespoon of cooking cream
  • 1 tablespoon of tomato paste
  • Chopped parsley for garnishing

Preparation

  1. Lightly dust the veal slices with flour, shaking off the excess.
  2. Melt the butter in a pan over medium-high heat and add the veal slices to quickly sear them on both sides. As soon as they color, remove them and set aside.
  3. In the same pan, pour the rosé wine and let it reduce for a couple of minutes over high heat, scraping the bottom of the pan to dissolve the cooking residues.
  4. Lower the heat, add the cream and tomato paste, mixing well to blend everything together.
  5. Season with salt and pepper and cook for a few minutes, until the sauce thickens slightly.
  6. Put the scaloppine back into the pan with the sauce and let them cook for another 3-4 minutes, turning them once to flavor them evenly.
  7. Transfer the scaloppine to plates and pour the remaining sauce from the pan over them.
  8. Garnish with chopped parsley and serve immediately.

Curiosity

A scaloppina is a typical cut of meat in Italian cuisine, consisting of thin slices obtained from the nut of the veal. The term “in pink” generally refers to a sauce made from the combination of cream and tomato, which gives the dish a slightly pink shade and a delicate flavor, enriched with rosé wine. Also experiment with different types of wine to find the one that suits your personal taste best.
