Ingredients
- 4 thin slices of veal (about 100-120 g each)
- Flour, as needed for dusting the veal slices
- 30 g of butter
- 1 glass of rosé wine
- Salt and pepper, to taste
- 1 tablespoon of cooking cream
- 1 tablespoon of tomato paste
- Chopped parsley for garnishing
Preparation
- Lightly dust the veal slices with flour, shaking off the excess.
- Melt the butter in a pan over medium-high heat and add the veal slices to quickly sear them on both sides. As soon as they color, remove them and set aside.
- In the same pan, pour the rosé wine and let it reduce for a couple of minutes over high heat, scraping the bottom of the pan to dissolve the cooking residues.
- Lower the heat, add the cream and tomato paste, mixing well to blend everything together.
- Season with salt and pepper and cook for a few minutes, until the sauce thickens slightly.
- Put the scaloppine back into the pan with the sauce and let them cook for another 3-4 minutes, turning them once to flavor them evenly.
- Transfer the scaloppine to plates and pour the remaining sauce from the pan over them.
- Garnish with chopped parsley and serve immediately.
