Crumbly Peach and Jam Tart

Ingredients

  • 300g of all-purpose flour
  • 150g of sugar
  • 150g of cold butter
  • 1 egg
  • 1 egg yolk
  • 1 packet of baking powder for sweets
  • 1 pinch of salt
  • Peach jam, about 300g
  • Fresh or canned peaches, about 2-3 peaches

Preparation

  1. In a large bowl, combine the sifted flour with sugar, baking powder, and a pinch of salt.
  2. Add the cold butter, cut into cubes, and work with the tips of your fingers until the mixture has a sandy consistency.
  3. Mix in the egg and yolk, and blend until the mixture is lumpy and completely combined.
  4. Take a springform pan, and butter and flour the bottom and sides.
  5. Pour about two-thirds of the crumb mixture into the bottom of the pan, pressing lightly with the back of a spoon to create a compact layer.
  6. Spread an even layer of peach jam over the crumb base.
  7. If using fresh peaches, wash them, cut them into slices, and arrange on the jam. If using canned peaches, drain well and slice them if they are not already sliced.
  8. Scatter the remaining crumbs over the peach and jam filling, without pressing down too hard.
  9. Bake the crumble in a preheated oven at 180 °C for about 35-40 minutes, or until the surface is golden brown.
  10. Allow to cool completely before unmolding and serving.
