Torta Savoia

The Torta Savoia is a classic Italian pastry, originating from Piedmont. It is a soft and delicate cake named after the ruling House of Savoy.

Ingredients

  • 150 g of sugar
  • 120 g of dark chocolate
  • 120 g of butter
  • 4 eggs
  • 70 g of type 00 flour
  • 50 g of potato starch
  • A sachet of baking powder
  • Powdered sugar for decoration
  • Salt (a pinch)

Preparation

  1. Start by melting the chocolate in a double boiler or in the microwave and then let it cool down slightly.
  2. Cream the soft butter with the sugar using an electric whisk until you get a smooth and frothy mixture.
  3. Separate the egg yolks and whites. Add the yolks to the butter and sugar mixture, one at a time, continuing to whisk.
  4. Mix the melted chocolate into the mixture and stir gently until it is completely absorbed.
  5. Whisk the egg whites with a pinch of salt until stiff peaks form.
  6. Sift the flour with the potato starch and baking powder and add these dry ingredients to the chocolate mixture, alternating with the whipped egg whites, stirring from the bottom up to not deflate the mixture.
  7. Pour the batter into a buttered and floured pan, about 24 cm in diameter, and bake in a preheated oven at 180 degrees for about 35-40 minutes.
  8. Before removing the cake from the oven, always do the toothpick test to make sure it is cooked: if it comes out clean, the cake is ready.
  9. Let the Torta Savoia cool completely before unmolding it and decorate with powdered sugar before serving.
