Savoy Cabbage, Potatoes, and Sausage

Savoy cabbage, potatoes, and sausage is a rich and substantial dish typical of Italian cuisine, perfect for the colder months. Here is the recipe to prepare it.

Ingredients

  • 1 medium-sized savoy cabbage
  • 500 g of potatoes
  • 300 g of pork sausage
  • 1 onion
  • 2 cloves of garlic
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Vegetable broth or water, as needed
  • (Optional) Chili pepper or black pepper to add spiciness

Preparation

  1. Begin by cleaning the savoy cabbage, removing the tougher outer leaves and cutting it into not too thin strips after having removed the central core.
  2. Peel the potatoes and cut them into medium-sized cubes.
  3. In a large frying pan or pot, sauté the finely chopped onion and garlic (which you will later remove) in a drizzle of extra virgin olive oil.
  4. Add the sausage, which you will have previously crumbled or cut into pieces, and brown it until it is well golden.
  5. Add the savoy cabbage in strips and the potatoes in cubes, then season with salt and pepper (and if you like, a bit of chili pepper).
  6. Cover the ingredients with vegetable broth or water, just enough to cook the potatoes and cabbage (the liquid should be slightly less than the level of the ingredients for a more stewed cooking).
  7. Cover with a lid and let cook over medium-low heat for about 30-40 minutes or until the potatoes and cabbage are soft.
  8. Check occasionally and stir to prevent the ingredients from sticking to the bottom of the pot.
  9. If the liquid dries up too much during cooking, add a bit of broth or water. On the contrary, if the mixture is too brothy at the end of cooking, raise the heat and let the excess broth evaporate.
  10. Make sure that the sausage is fully cooked before turning off the heat.

Serve the savoy cabbage, potatoes, and sausage hot, perhaps accompanied by a slice of toasted rustic bread to enjoy every drop of flavor.
