Cabbage Cups with Shrimp in Spicy Pink Sauce

Preparation

  1. Start by preparing the spicy pink sauce. In a bowl, combine the mayonnaise, ketchup, brandy or cognac if you choose to use it, Worcestershire sauce, Tabasco, and lemon juice. Mix well until you get a smooth sauce. Taste and adjust the salt, pepper, and spice to your liking. Put the sauce in the fridge to flavor while you proceed with the rest of the recipe.

  2. Take the cabbage leaves, wash and dry them. Remove the toughest part of the central stem to make them more pliable. Bring a pot of lightly salted water to a boil and blanch the cabbage leaves for a few minutes, until they become tender but still firm enough not to break. Drain them and plunge into cold water to stop the cooking and maintain a nice green color.

  3. In a skillet, heat a little oil and sauté the shrimp for a few minutes, until they turn pink and are cooked. Season with salt and pepper and let them cool down a bit.

  4. To compose the cups, take two cabbage leaves and slightly overlap them crossed. Place some shrimp in the center and finish with a generous spoonful of the spicy pink sauce.
