Zucchini swirls without butter and eggs

I can offer you a recipe for zucchini swirls without the use of butter or eggs. Considering your restrictions, we will use extra virgin olive oil as fat and water to moisten the dough.

Ingredients

  • 250 g of flour
  • 100 ml of lukewarm water
  • 50 ml of extra virgin olive oil
  • 1 medium zucchini
  • Salt to taste
  • Pepper to taste
  • Dry active yeast for baking, 1 packet (about 7 g) or equivalent fresh yeast
  • Aromatic herbs to taste (for example, thyme, rosemary or oregano)

Preparation

  1. Dough: In a bowl, mix the flour with the salt and dry yeast. Add the lukewarm water and oil, then knead until you obtain a smooth and homogeneous mass. If using fresh yeast, dissolve it in the water before adding it to the other ingredients. Let the dough rest for about 1 hour in a warm place, covered with a tea towel, until it doubles in volume.

  2. Preparing the zucchini: Meanwhile, wash the zucchini and cut them into julienne or grate them with a large-hole grater. Season the zucchini with salt, pepper, and the chosen aromatic herbs.

  3. Rolling out: After the dough has risen, roll it out on a lightly floured surface to form a rectangle about half a centimeter thick.

  4. Filling: Spread the zucchini over the rolled-out dough, leaving a free edge to make rolling easier.

  5. Forming the swirls: Roll the dough up on itself, starting from the long side, wrapping the zucchini inside, then cut the rolled up dough into slices about 2 cm thick.

  6. Baking: Place the swirls on a baking sheet covered with parchment paper with the cut side facing up. Let them rise for another 15-20 minutes while the oven heats up to 180 °C. Then bake the swirls for about 20 minutes or until they are golden and crispy.

  7. Finishing: Remove the swirls from the oven and let them cool on a wire rack before serving.
