Preparation
- Begin by bringing the water to a boil in a large pot, adjusting with salt.
- Pour the maize flour for polenta in a rainlike manner, stirring constantly to prevent lumps from forming.
- Lower the heat and continue stirring until the polenta easily detaches from the pot’s walls (about 40-45 minutes depending on the flour).
- At the end of cooking, add the grated cheese and stir until it has completely melted into the polenta.
- Pour half of the polenta into a round, oiled baking dish (or lined with parchment paper), creating an even layer that will form the base of your tart.
- Spread a layer of previously sautéed and well-drained vegetables over the polenta, then add the soft cheese cut into pieces and the thinly sliced cured meats.
- If you wish, beat the eggs and pour them evenly over the filling.
- Cover with the rest of the polenta creating a top layer, sealing the edges well.
- Bake in a preheated oven at 180°C for about 20-25 minutes, or until the surface is golden.
