Savoury Spinach Plumcake

The savoury spinach plumcake is an excellent choice for a tasty appetizer or for a picnic outdoors. Here’s the recipe:

Ingredients

  • 250 grams of fresh spinach (or 200 grams of frozen spinach)
  • 180 grams of flour
  • 3 eggs
  • 100 ml of milk
  • 100 ml of extra virgin olive oil
  • 80 grams of grated cheese (pecorino or parmesan)
  • 1 packet of baking powder for savoury dishes
  • Salt, as needed
  • Pepper, as needed
  • Nutmeg, a pinch (optional)

Preparation

  1. If using fresh spinach, wash and cook them in a pan with a drizzle of oil and a clove of garlic until they have wilted. If using frozen spinach, thaw them and squeeze well to eliminate excess water.

  2. In a large bowl, beat the eggs with a whisk or a fork. Add the milk and olive oil, continuing to stir.

  3. Incorporate the grated cheese into the liquid ingredients and mix well.

  4. Add the previously wilted spinach to the mixture and blend.

  5. Gradually add the sieved flour and baking powder, mixing well to avoid lumps. Season with salt, pepper, and if you like, add a pinch of nutmeg.

  6. Pour the mixture into a plumcake mold previously buttered and floured or lined with parchment paper.

  7. Bake in a preheated oven at 180 °C (356 °F) for about 40 minutes or until a toothpick inserted in the center of the plumcake comes out clean.

  8. Allow to cool before unmolding and serving.
