Savory Plumcake

Here’s a base for an Italian recipe, to which you can add cooked ham, cheese, or vegetables to your liking.
Ingredients
- 180 g of all-purpose flour
- 3 eggs
- 100 g of grated Parmesan cheese
- 100 ml of milk
- 80 ml of extra virgin olive oil
- 1 packet of baking powder for savory dishes
- Salt and pepper to taste
- Aromatic herbs (such as rosemary or thyme) to taste
- 150 g of additional ingredients of your choice (cooked ham, grilled zucchini, olives, sun-dried tomatoes, etc.)
Preparation
- Preheat the oven to 180 °C.
- In a bowl, beat the eggs with a whisk and add the milk and oil, mixing well.
- Add the grated Parmesan cheese and stir to incorporate it.
- Combine the sifted flour with the baking powder, a pinch of salt and pepper, and the finely chopped aromatic herbs.
- Mix the mixture with a spatula until you obtain a homogeneous dough.
- Now is the time to add your extra ingredients: cut them into small pieces if necessary and fold them gently into the mixture.
- Pour the mixture into a previously oiled and floured plumcake mold, leveling the surface.
- Bake for about 35-40 minutes, or until a toothpick inserted in the center of the plumcake comes out clean.
- Once cooked, let the plumcake cool in its mold for a few minutes, then remove it from the mold and let it cool completely on a wire rack.
