Savory Plumcake

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, beat the eggs with a whisk and add the milk and oil, mixing well.
  3. Add the grated Parmesan cheese and stir to incorporate it.
  4. Combine the sifted flour with the baking powder, a pinch of salt and pepper, and the finely chopped aromatic herbs.
  5. Mix the mixture with a spatula until you obtain a homogeneous dough.
  6. Now is the time to add your extra ingredients: cut them into small pieces if necessary and fold them gently into the mixture.
  7. Pour the mixture into a previously oiled and floured plumcake mold, leveling the surface.
  8. Bake for about 35-40 minutes, or until a toothpick inserted in the center of the plumcake comes out clean.
  9. Once cooked, let the plumcake cool in its mold for a few minutes, then remove it from the mold and let it cool completely on a wire rack.
