Savory cones with mortadella mousse

Ingredients
- 150g of Bologna IGP mortadella
- 200ml of very cold whipping cream
- 30g of grated Parmesan cheese
- 1 tablespoon of chopped pistachios (optional)
- Salt, to taste
- Pepper, to taste
- Ready-to-use puff pastry cones or brisée dough cones (or you can make them yourself with strips of puff pastry or brisée wrapped around small aluminum cones and baked until golden)
Preparation
- Start by whipping the cream in a bowl until it is very firm.
- Meanwhile, cut the mortadella into pieces and blend it into a cream using a mixer or an immersion blender.
- Add the grated Parmesan to the mortadella cream and mix until you have a smooth mixture.
- Fold the mortadella mixture into the whipped cream, adding salt and pepper to taste. If desired, you can also add the chopped pistachios for crunchiness and a touch of color to the mousse.
- Use a piping bag to fill the savory cones with the mortadella mousse. If you do not have a piping bag, you can use a plastic bag by cutting off one corner.
- Place the filled cones in the refrigerator for at least 30 minutes before serving, so that the mousse slightly sets.
