Salty truffles

Ingredients

  • 200 g of fresh goat cheese or another spreadable cheese
  • 50 g of grated cheese (pecorino, parmesan, or similar)
  • 100 g of chopped nuts or other dried fruits of your choice
  • Finely chopped herbs (such as rosemary, thyme, parsley) or spices to taste
  • Salt and pepper to taste
  • Unsweetened cocoa powder for coating (optional)
  • Grated lemon zest (optional)
  • Extra virgin olive oil

Preparation

  1. In a bowl, mix the goat cheese with the grated cheese, adding a pinch of salt and pepper.
  2. Add the chosen herbs or spices, and if you wish, a touch of grated lemon zest for added freshness.
  3. Mix everything together until you have a homogeneous mixture.
  4. Form small balls with the mixture.
  5. Roll the balls in the chopped nuts until completely covered. If you want to add an original touch, you can roll some balls in unsweetened cocoa powder to simulate the appearance of sweet truffles.
  6. Place the salty truffles on a serving plate and chill in the fridge for at least one hour before serving to allow them to firm up.
  7. When serving, you can drizzle with some extra virgin olive oil.
