Tomato and Mozzarella Savory Pie

The tomato and mozzarella savory pie is a simple and tasty dish, perfect for a summer lunch or as a standalone dish for a casual dinner. Here is the recipe with a slight Italian twist:

Ingredients

  • 1 roll of ready-made puff pastry (or brisée if you prefer)
  • 200 g of mozzarella (better if it’s buffalo mozzarella from Campania)
  • 250 g of ripe tomatoes, preferably cherry tomatoes like Pachino
  • A few leaves of fresh basil
  • Salt and pepper to taste
  • Extra virgin olive oil
  • 1 egg for brushing (optional)
  • Dried oregano (optional)

Preparation

  1. Preheat the oven to 180 °C.
  2. Unroll the puff pastry and lay it on a baking tray lined with parchment paper, making sure to leave the protective paper under the dough.
  3. Prick the bottom with a fork to prevent it from puffing up during cooking.
  4. Cut the tomatoes into slices or in half if using cherry tomatoes and arrange them evenly over the pastry.
  5. Slice the mozzarella and distribute it over the tomatoes.
  6. Season with salt, pepper, and a drizzle of extra virgin olive oil. If you like, you can also add a pinch of dried oregano.
  7. Add the hand-torn fresh basil leaves.
  8. Optional: In a small bowl, beat the egg and brush the edges of the puff pastry for a more intense browning during baking.
  9. Bake the savory pie for about 20-25 minutes or until the puff pastry is golden brown and crispy.
  10. Let it cool slightly before serving.

Fun Fact

In Italy, the term “torta salata” refers to a variety of preparations ranging from the French quiche to the more rustic “torta rustica” typical of many Italian regions. The use of buffalo mozzarella and basil recalls the flavors of the famous Caprese salad, making this dish a tribute to Mediterranean flavors.
