Tomato and Mozzarella Savory Pie

Ingredients

  • 1 roll of round or rectangular puff pastry
  • 250 grams of pizza mozzarella
  • 2-3 ripe tomatoes, depending on size
  • Salt and pepper to taste
  • Dried oregano to taste
  • A pinch of fresh basil (optional)
  • Extra virgin olive oil
  • 1 egg for brushing (optional)

Preparation

  1. Preheat the oven to 180 °C.
  2. Roll out the puff pastry in a baking pan previously lined with parchment paper. Prick the bottom with a fork to prevent it from puffing up during baking.
  3. Cut the mozzarella into cubes or slices and let it drain to remove excess liquid.
  4. Slice the tomatoes into not too thin rounds and salt them slightly.
  5. Spread the mozzarella over the surface of the puff pastry and cover it with tomato slices, overlapping them slightly.
  6. Drizzle everything with extra virgin olive oil, sprinkle with salt, pepper, and dried oregano to taste. If you like, you can also add some fresh basil leaves.
  7. If you want to give a more golden appearance to the surface, you can brush the edges of the puff pastry with a beaten egg.
  8. Bake the savory pie and let it cook for about 20-25 minutes or until the pastry is golden and crispy.
  9. Remove the savory pie from the oven and let it cool down a few minutes before serving.

This savory pie lends itself to many variations: for example, you can add anchovies in oil, capers or Taggiasca olives for an extra touch of flavor. Moreover, it is also possible to use shortcrust pastry instead of puff pastry, for a crumblier and less crispy result.
