Savory Spinach and Salmon Pie

Ingredients
- 1 roll of rectangular or round puff pastry
- 250 g of fresh or frozen spinach
- 200 g of smoked salmon
- 200 g of ricotta
- 2 eggs
- 100 g of grated cheese (Parmesan, Pecorino, or a mix)
- Salt and pepper to taste
- Nutmeg to taste
- Olive oil
- 1 clove of garlic (optional)
- Butter and breadcrumbs for the baking dish
Preparation
- Preheat the oven to 180 °C.
- If using frozen spinach, thaw in advance and squeeze out the excess water. If they are fresh, wash them and blanch them briefly in a pot with boiling water for 2-3 minutes, then squeeze out all the water.
- In a pan, sauté a clove of garlic in olive oil (if you decide to use it), add the spinach. Cook for about 5 minutes. Remove the garlic clove and let the spinach cool.
- Cut the smoked salmon into strips.
- In a bowl, mix the ricotta with the eggs, the grated cheese, a grating of nutmeg, salt, and pepper until the mixture is homogeneous. Add the spinach and cut salmon.
- Prepare a baking dish (round or rectangular to fit the puff pastry) by greasing it with a bit of butter and sprinkling it with breadcrumbs. This will help get a crisper pie.
- Unroll the puff pastry in the dish, prick the bottom with the tines of a fork, and pour the mixture of spinach, salmon, and ricotta inside the pastry.
- Fold the edges of the puff pastry inward to partially close the pie.
- Bake the savory pie for about 25-30 minutes or until the surface is golden and crispy.
