Smoked Salmon and Leek Savory Tart

The savory tart with salmon and leeks is a tasty and relatively simple recipe to prepare. It can be an excellent option for a light lunch or as an appetizer in a buffet. Here is the recipe:

Ingredients

  • 1 roll of brisée dough or puff pastry (about 230 g if homemade)
  • 200 g of smoked salmon
  • 2 medium-sized leeks
  • 200 ml of fresh cream
  • 3 large eggs
  • Salt and pepper to taste
  • Extra virgin olive oil or butter for frying
  • Chopped chives (optional)
  • 1 tablespoon of mustard (optional for an extra flavor)

Preparation

  1. Preheat the oven to 180 °C.
  2. Clean and slice the leeks. To do this, remove the dark green top part and the root base, then cut them into rings or thin strips.
  3. In a frying pan, heat a drizzle of extra virgin olive oil or a knob of butter and sauté the leeks until soft. If you wish, this is the time to add the mustard to further flavor.
  4. Roll out the brisée or puff pastry in a previously greased or parchment-lined tart pan.
  5. Spread the sautéed leeks over the pastry base.
  6. Cut the smoked salmon into strips or pieces and distribute them evenly over the leeks.
  7. In a bowl, beat the eggs with the fresh cream, add salt and pepper to taste. If you chose to use chives, chop them finely and add them to the mixture.
  8. Pour the egg and cream mixture over the salmon and leeks in the pan.
  9. Bake for about 25-30 minutes or until the surface of the savory tart appears golden and the filling is well set.
  10. Let it rest a few minutes before serving.

The smoked salmon and leek tart can be enjoyed both hot and at room temperature.

Curiosity

Smoked salmon is an ingredient that goes very well with the delicate flavors of leeks and the creaminess of egg and cream. Moreover, for an Italian twist, you could use a homemade savory shortcrust pastry as the base of your savory tart, which will add a rustic and homemade touch. Enjoy your meal!
