Savory Pie with Ricotta, Mushrooms, and Ham

Ingredients

  • 1 roll of puff pastry
  • 250 g of fresh ricotta
  • 150 g of mushrooms (champignons, porcini or mixed)
  • 100 g of diced cooked ham
  • 1 egg (plus one for brushing)
  • Salt and pepper to taste
  • Extra virgin olive oil
  • 1 clove of garlic
  • Chopped parsley to taste
  • 50 g of grated Parmesan cheese

Preparation

  1. Preheat the oven to 180 °C.
  2. Clean the mushrooms by removing the earthy part of the stem, rinse them briefly under running water and pat them dry with a kitchen towel. Slice or chop them.
  3. Sauté the garlic clove in a pan with a drizzle of oil. Add the mushrooms and cook over medium-high heat until they turn golden brown. Season with salt and pepper and sprinkle with chopped parsley. Remove the garlic clove and let the mushrooms cool.
  4. In a bowl, mix the ricotta with the egg, the Parmesan, the diced ham, salt and pepper.
  5. Roll out the puff pastry in a baking tray lined with parchment paper. Prick the bottom of the dough with a fork.
  6. Spread the ricotta mixture over the puff pastry and smooth it out with a spatula.
  7. Lay the mushrooms on top of the ricotta mixture.
  8. Fold the edges of the puff pastry inward. Brush the edges with a beaten egg.
  9. Bake for about 25-30 minutes, or until the surface appears golden brown and the pastry is crispy.
  10. Remove from the oven and let it cool slightly before serving your savory pie.
