Savory Pea and Pancetta Scones

Ingredients

  • 250 g of type 00 flour
  • 80 g of cold butter, cubed
  • 100 ml of cold milk
  • 2 teaspoons of baking powder for savoury cakes
  • 100 g of fresh or frozen peas
  • 80 g of diced pancetta
  • 1 medium egg
  • 50 g of grated cheese (Parmesan or Pecorino)
  • Salt to taste
  • Pepper to taste

Preparation

  1. Preheat the oven to 200 °C and prepare a baking tray by lining it with parchment paper.
  2. If you’re using fresh peas, blanch them for a few minutes in salted water, then drain and rinse them under cold water. If you’re using frozen ones, you can thaw them and proceed directly.
  3. In a pan, sauté the pancetta until it becomes crispy and then set aside on paper towels.
  4. In a large bowl, sift the flour and baking powder. Add the cold butter and work with your fingertips until you get a sandy mixture.
  5. Add milk little by little, stirring with a wooden spoon until you have a slightly sticky dough.
  6. Add the peas, crispy pancetta, and grated cheese. Season with salt and pepper.
  7. On a floured surface, roll out the dough to about 2 cm thick.
  8. Using a round pastry cutter or a glass, cut out your scones and place them on the prepared tray.
  9. In a small bowl, beat the egg and brush the surface of the scones to give them a nice golden color.
  10. Bake for about 15-20 minutes or until well browned.
  11. Let the scones cool on a wire rack before serving.
